Mmmmmm
I made potato pancakes yesterday as a late night dinner and thought I’d share the recipe, along with a warning that this is the most oily, heavy meal you could ever come up with. Well, I guess cooking with meat would automatically make for a heavier meal, but as an illustration, when I finished cooking I had half as much oil in the bottle as when I started. Maybe don’t use olive oil like I did. Vegetable oil is better for frying anyway.
I sort of combined Jewish latkes with veggie burgers and got this:
-Grate a couple potatoes, some zuchini, and a few onions
-Add a can of lentils
-Chop up some dill or green onions or something else green and yummy
-Add salt and pepper
-Mush it all around with your hands (warning: this is incredibly enjoyable) and plop a few balls of the mixture into a well-oiled frying pan on high heat. Fry the buggers, pressing them down with a spatula, and set the finished ones to dry on a plate with paper towel. Serve with apple sauce, sour cream, mayo, ketchup, dijon mustard, or (as my bubbie used to) sugar.
Conor had his on a sandwich. Is it wrong for me to criticize his starch intake?
